Hello ladies~! I don't necessarily have a specific recipe to post, but I can help anyone with any questions about food or recipes you have, just ask!
Pic is Sous Vide chicken breast, pan seared and basted with garlic thyme butter, house cured bacon lentils, glazed cauliflower and romanesco, and confit cippolini onions, with a chicken Dijon jus, garnished with red frisée.

@aliceliayers, thanks for the tip I'm actually just going to do my norm scallop potatoes but gonna try a room temp sweet potato salad I always do sweet potato casserole but wanting new things. I got the recipe off pin. Already got several things made haystacks, coconut cake, Mac n cheese about to do my pies

That's a difficult one, potatoes are usually served hot, with the exception of chips. My suggestion, from a catering point of view, would be to bake your potatoes off, cut them, and brush them with olive oil ahead of time, then they can be left out overnight, covered. Make a sauce for them, like for instance, roasted leeks, garlic, onions, and thyme blended in with some heavy cream, butter, salt, and pepper, which can be stored in the refrigerator occupying little room, then when it comes time to serve, throw the potatoes back in the oven for like, 5 minutes and pour the sauce over. That would give you a nice bite sized potato side dish that's got some creaminess, almost like a gratin, but much less work. The sauce can be made to suit your families tastes, like a homemade "mac&cheese" sauce for cheesy potatoes, or spinach and cream cheese, or if you're not one for sauces, Mrs.Campbells always has those handy little soups that can be used ;D (depending on your grocery store, campbells actually makes some pretty good canned sauces) top it with some fried onions, and you're a hit :)@txyogagirl,

Help me think of a side dish that can be served room temp made with potatoes for easter. @aliceliayers, I only have so much room n my fridge and oven and cook a lot. Christmas I did spinach balls sweet potato casserole all my pies set out overnight everything else had to go in fridge but it's hard to find food I can just cover with lid then open for lunch.
