OP does the vinegar make them very sour? I'm gonna make tofu tonight but not sure if I wanna go that flavor for DH

Thaw out the tofu in lukewarm water. To press it you can use books or something heavy. I use two cutting boards and paper towels between them and my crockpot on top for weight. Let it set for 30ish minutes. Once it's pressed cut it up and put it in a ziplock bag. Add in the balsamic vinaigrette and veggie stock. Just add enough for it to soak some up. Put parchment paper down on a metal pan and lay them down. I think I had the oven on 375. I just eyeballed them, I think it took about 10 to 15 minutes and I flipped it for another 10 to 15 minutes. They have the same texture as chicken nuggets when they are done.

Tofu is really good. The best thing you can do to tofu is freeze it. It gets more "sponge like" I guess you could say. It helps it suck up marinates better. Make sure you press it before you marinate as well. I used balsamic vinaigrette and veggie stock.
