Ingredients:
~Crust~
• 2 Tsp Active Dry Yeast *1 Packet*
• 3/4 Cup Warm Water
• 1 Tsp Sugar
• 1/4 Cup Vegetable Oil
• 2 Cups Flour
• 1/2 Cup Whole Wheat Pastry Flour
• 1 1/2 Tsp Salt
• 1 Tbsp Ground Flax Seed
• 1-2 Tbsp Olive Oil
~Toppings~
• 2 Cups Tomatoes *Rougly
Chopped*
• 3 Basil Leaves *Fresh* Or
1Tsp *Dried*
• 1 Tsp Oregano *Dried*
• 2 Tbsp Vegan Parmesean Cheese
• 1 Cup Vegan Jack Cheese
*Thinly Sliced*
• 1 Package Vegan Mozarella
Cheese *Shredded*
• 24 Slices Vegan Pepperoni
Instructions:
1- Pour the water in a small bowl and heat in the microwave about 11 seconds. Not too hot and not too cold. Add yeast and suger then stir. Leave for about 5 minutes, then add vegetable oil. Set aside.
2- In a large bowl combine the flour, salt, and ground flax seed. Stir together until well combined.
3- Pour yeast mixture into the bowl with the flour and stir vigorously for several minutes. Knead in bowl for 5 to 7 minutes until you can make an impression in the dough with your thumb in the middle. Pour olive oil over the dough and turn it several times to ensure both the dough and the bowl are coated with oil. Cover and set aside to rise. It will need about 2 hours to rise.
4- Once the dough is ready cover it with a large sheet of waxed paper and use a rolling pin to spread it out to the dimensions of your pan. This will fit a 12" deep dish pizza pan. Make sure you allow the dough to fill up the sides of the pan a bit to create a sort of deep-dish pizza bowl. Set aside to prepare your toppings.
5- While preparing toppings turn heat to 450 degrees f.
6- Place the thinly sliced vegan jack cheese across the bottom of the dough. Cover that with the shredded vegan mozarella. Spread it out so you don't see and of the pizza dough coming through.
7- Place the chopped tomatoes in a food processor along with basil, oregano, and vegan parmesean. Pulse for just a few seconds. You want the tomatoes to be fairly ground, but still with lots of texture. Spread the tomato mixture over cheese.
8- Spread the chopped slices of vegan pepperoni evenly over the top of the tomato mixture. Sprinkle with additional vegan parmesean.
9- Lastly, place in your prepared over for 20-25 minutes. The dough should be showing through with a nice golden colo. Allow the pizza to cool for about 10 minutes before slicing an serving.
