I keep mine in the fridge but sometimes I don’t like cold ketchup so I have a spot I keep packets from fast food places and I’ll use those because they are room temp

I've been food sanitation certified for going on 20 years now. Ketchup is shelf stable and can be kept at room temperature after being opened. However, I still keep mine in the fridge

@supermomof4 there's plenty of vinegar in ketchup which keeps it from going bad quickly.

@supermomof4 you only ever encounter ketchup that's gone bad in restaurants when the staff constantly "marry" the ketchup bottles to fill them, adding old to new, and never actually wash out the container.
So the old ketchup at the bottom of the bottle never gets used and eventually when it goes bad it will contaminate the newer ketchup in the top of the bottle. But that scenario would take awhile to happen and there would need to be continuous health code violations on the part of the restaurant staff. Even washing ketchup bottles only once a week would keep that from happening.

I've left mine out a few times but at every restaurant I worked at we always left it out. I try to keep it cold because I prefer it that way.

I keep it in the fridge after we open it but every restaurant I've ever worked in, we've left it out. We'd marry the bottles like once throughout the week and washed the ones that got emptied into others and filled with new. We always put a sticker or some kinda something on it in every place I've worked so everyone knew what had been done and when. We couldn't ever marry a bottle that had already been previously married, if that makes sense! Haha
