Icebox cake! It’s an old fashioned easy to make “cake”. You use some type of wafer cookie or graham crackers or something. Some sort of pudding and a filling if you want. I use graham crackers, sliced banana, banana pudding and caramel sauce in between the layers. The graham cracker soaks up the pudding and becomes almost cake like in texture. It’s yummy and easy! And you can make so many different combinations.

@squishymommy1, sounds good! Similar to something my MIL makes called eclair dessert. I thought it was frozen for some reason 😂

@phoebesmommy, haha it’s because it sets up in the “icebox”. It takes about 6 hours. Works best with not freshly opened graham crackers (they soak up better)
