Got the a/c’s cranked. It’s going to be a hot one today. Got to stay ahead of the heat. Mississippi pot roast in the crock pot, coffee in hand. Watching Greys. It’s going to be a good day! Can’t wait for dinner.

I have never had a Mississippi pot roast, but every time I see a post about it, I think about how delicious it looks. Do you have a particular recipe you use?

It was one of those Facebook video recipe things. Basically it’s a beef roast. Any cut you want basically. I usually use chuck roast or a tri tip roast. Pepper the meat well and then sear in a hot hot pan. Put in the crock pot. Cover the roast in ranch dressing mix and au jus mix. Throw in a jar of pepperinchinis add a stick of butter to the top and cook on low until the meat falls apart. Serve with mashed potatoes.
