I wasn’t a stay at home mom. But I had a job. Did 3 classes a week and took care of my exes 2 kids at the time. Also depends on if you want to do online classes or go to a campus for it.
I’d try 2 personally. I was able to go full time and work. (No kids) I’d start with the easier ones so starting out won’t be so hard. Then you will get better idea of how much work it is.
I always went full time (4 classes/semester) when I was getting my undergrad I was pregnant and then had a newborn when I was finishing. I would recommend doing one challenging class and one easy class to start off with especially if you're going to campus. Look into what they require though if doing financial aid

How much time do you think you’ll have to do school work and classes? Maybe start with 1-2 so you get a feel for it.

I used to take 3 night classes. That worked well for me... & I made sure I took them on different days
