@mamachey, SUPER EASY! The key is cooking the syrup in sugar to meltdown sugar. I used brown sugar as well. Gave it a MUCH better taste. Also I used crush pecans because I hate big ass pieces of pecan.
Ingredients
2 cups crushed pecans
1/4 butter
4eggs
1.5 cup corn syrup (I used light)
1 cup brown sugar
1.5tsp vanilla extract
Pie crust (make or buy)//if using bought pie crust leave in freezer until ready to pour contents. Also if you get regular pie dish instead of deep dish it makes two!!
-Preheat oven 350
-Add sugar and syrup to a small pot. -Mix on high for 5-7 mins or until it because a softer liquid. Let cook
-Whisk eggs in a large bowl, add the syrup/sugar mix in bowl(make sure you pour slowly so make sure it’s mixed in well with egg)
-Add pecans, butter, and extract
-pour into your pie crust
-bake 45-60 mins depending on your oven.
Let sit and enjoy! Also a neighbor or family member would love the second pie!
