Those look delicious. I attempted baking cookies today & almost caught my house on fire. It was bad & the cookies were so hard ?

I may have to try that. I have butter since we quit using margarine. I keep olive oil in the house too. Just need to get the sugar substitute.

Kaileigh-you could use butter and sugar. Same measurements. Like I said, the coconut product doesn't make these healthy, just gives an alternative to sugar and butter. You could also use olive oil (probably only need about 4 tbs of that) and brown sugar as well or a sugar substitute in the appropriate amount.

@kailei, you could substitute the coconut oil with olive oil and the sugar with stevia or brown sugar. I think they will still come out good.

They look yummy and they sound yummy, but if I made them and my dh ate them it wouldn't be good. He is allergic to coconut.

I just added the recipe to the original post. It's from a blog called "running with spoons" she does a lot of gluten free, vegan and paleo recipes. Some are healthy-banana chocolate chip muffins are crazy good and gluten free and full of protein-but some are just tasty alternatives to gluten. Like these. And sorry, skate, my edit screwed up your comment.

I've got big shoulders, darling. I can take it. Lol And, yes, they're quite chocolatey. And gooey. And you'd never know there isn't any flour or sugar.

Umm...idk...gluten free and white sugar free? If I'm eating junk food I'm going all in! Oh who am I kidding? I want one of those brownies! Still probably yummy and chocolate-y either way! Lol

They're really good. They're not exactly healthy, but they're a pretty good replication of a chewy brownie.

Anyone want a brownie?

(They're gluten free and white sugar free...don't tell my family!)

Recipe:

6 tbsp coconut oil

6 oz chocolate chips (I used sugar free)

1/4 c unsweetened cocoa powder

2 eggs

2/3 c coconut sugar

1/4 tsp salt

2 tsp vanilla

3 tbsp cornstarch

Preheat oven to 350 F. Line an 8x8 glass pan with tin foil and spray with non stick spray. Melt chocolate chips and oil on the stove. In stand mixer cream sugar, eggs and vanilla for 2 minutes. Add melted chocolate mixture. Blend til smooth. With mixer on low, add cocoa powder, salt and cornstarch. Mix until thick and smooth. Pour into prepared pan. Bake for 25-30 minutes until toothpick comes out clean. Let stand 15 minutes before cutting. You can sub butter and white sugar for the coconut oil and sugar.
