On the menu tonight, I cooked for my fiancé and I, a gourmet dinner of frozen french fries and frozen spinach pizza. Hashtag wife me up.

Spaghetti, grilled veggie packet (red potatoes, carrots, brussell sprouts, mushrooms, onion, red bell pepper, butter and Italian seasoning), and fruit bowls (plums, Apple slices, fresh peach slices, and strawberries).

I ate enough for 10 people. It hurts.

Sorry, megz, didn't see your question. I used thick spaghetti tonight. I've used rice noodles in the past, but I didn't feel like going to the store tonight. The recipe is super simple. This was a 2 person serving, so adjust accordingly: 1 chicken breast cut into thin slices, 2 tbsp soy sauce, 1 tsp corn starch, ginger, black pepper and garlic powder to taste. Marinate the chicken in the soy sauce mixture for 1-2 hours. Sauté chicken in 2 tbsp olive oil until thoroughly cooked. Add 2 cups veggies of your choice (I used red pepper, broccoli, cauliflower, green beans, onions, carrots, squash, zucchini and edamame) and sauté until tender. Add to cooked noodles.
