Vegan foods

I’m debating whether or not to try the traditional fast during Holy Week - next week for me since I’m Greek Orthodox - which requires zero animal bi-products. I’m an on/off vegetarian but rn I kind of rely on chicken/turkey/cheese/eggs for a lot of my protein. I realize that during this pregnancy I may need to take the year off (sorry, Jesus!) but I’m wondering if you ladies have any high-protein vegan ideas for me to get me through?

Thank you for the ideas!! My mother-in-law - straight off the boat - is telling me not to fast bc I’m pregnant but I def feel it’s doable. Like I said, I’m an on/off vegetarian & love plant-based eating & like you said, there are so many options nowadays, so I feel like it could only be beneficial. I just wanted to make sure I could have enough meals that satisfy my little girl’s appetite, but she loves veggies (we have greens with every lunch & dinner) so I’m not too worried. Thanks, again!!!

My ultimate favorite dish right now is a hummus veggie wrap. I bought these coconut wraps and also veggie wraps by the brand wrawp. I add half an avocado, some hummus, broccoli, carrots, spinach or kale, and any other veggie i might have laying around. Typically steam them first then grill the wrap. Soo good and my levels are always perfect. I've actually even experimented with a regular wrap and they were pretty good as well! I sometimes have steamed broccoli on the side as well.

For dinner I actually food prep a vegan chili lately I can send you the recipe if you are interested. I've also added for more protein the gardein "meat". This has always kept my levels perfect and me feeling satisfied.

For a quick lunch I throw together a nice salad!

Also tacos... haven't tried that yet but I bet those wrawps you could toast them and make something with them! Those wrawps are a life saver for cravings. Chip brand beanitos are amazing too don't know if you've tried them.

Yes those things you listed have carbs but they are the good carbs! We aren't trying to eliminate carbs completely just have to limit and be mindful of them. Avocados have never messed my numbers up :). Actually veggies in general haven't! Only thing I had to ditch was the potatoes and high sugar fruits! And of course the pasta and breads. BUT I have found lentil pasta and a black bean pasta work fine. It's been a lot of experimenting and being creative. This day in age we have soo many options out there! Hope my blabbering has helped a bit. Let me know if you'd like more recipe ideas. Also googling high protein vegan meals works as well too!

Thanks, Ilana! I certainly have a lot of these foods in my diet already. But avocados, nuts and hummus/beans already have carbs in them. Just trying to be realistic with my busy work schedule & meal planning w/my toddler. Aside from salads, I’m not sure what I could quickly whip up for the whole family. I have a few ideas but many dinners like black bean burgers & vegan tacos are still high in carbs. Just mulling it over...
What are your go-to weekday meals?

Avocados, hummus, beans, lentils, tofu, edamame, almond butter, peanut butter, leafy greens, pumpkin seeds, sunflower seeds, nuts, hemp seeds, chia seeds, and all veggies have protein... I could go on and on lol tons of options. I'm vegan and doing great just sticking to diet for my levels so it is completely possible. :)
