I made some but the "spanish" way... With green chili Mexican cheese cream cheese .. And seasonings it was super good ?

It was amazing. My only suggestion is a little seasoning on the zucchini before you cook it.

Makes 2 servings.

Ingredients:

2 medium zucchini

1/2 pound ground turkey

1/2 onion chopped

1/2 cup tomatoes diced

1 cup cheddar cheese  shredded

1 tablespoon italian herbs

1 tablespoon garlic powder

Directions:

1. Cut zucchini long-ways down the middle, scrap out the insides and set aside

2. Brown turkey in pan breaking it up into small pieces

3. Add onions, insides of zucchini, tomatoes and seasonings into pan and sauté until onions are tender

4. Fill zucchini boats with mixture and top with cheese

5. Cover and place in oven at 350º for 30 minutes

6. Uncover and cook for 10 minutes to let cheese brown.

7. Serve
