@diana Ill have to write one first ? I learned from watching my mother and grandmother so i dont have measurements or amount of chiles i used. I was looking for one on google that was close to how i do it but i didnt like the recipes ?

I made chicken and sausage jambalaya and the rice turned super sticky so now I’m eating Texas cheese toast and silk pie. These look BOMBBBB???

Frozen bread isle lol! It’s just French bread with garlic butter and a bunch of cheese. I haven’t had many cravings since I got pregnant but cheese toast has been one, my freezer stays stocked haha

@diana i use dried guajillo chiles and a mix of chile de arbol and chile japones with the stem taken off if they have it. I boil a handful of guajillos ill say about 10-15 and a handful (i cant guess i put alot!) of chile arbol and japones until they are soft. Add chiles to blender (you can add the arbol and japones chiles little by little to get the spice you want) with 3-4 garlic cloves, pepper, and 2 chicken boullion cubes (or 4 tbsp). Add the water that you used to boil chiles into the blender to cover half of the chiles. Blend until its all smooth. Once its blended put a wired stainer (not for pasta since the holes are too big) on top of a bowl large enough to fit with the strainer and stain the sauce. Mix it with a spoon to get all the juice seperated from the seeds. Throw away seeds and yucky stuff. Now for the messy part. In a non stick skillet add about 1/4 cup of oil and let it warm up. Dip cold tortilla into sauce to cover both sides and then fry the tortilla for about 15 seconds each side until soft but not too soft or it will fall apart and this might take practice. Once both sides are soft, transfer tortilla to a plate, add your filling (potato and cheese, cheese, shredded chicken, or other that you might like) and roll it up like a taquito. Be careful though cause it will be hot and hurt your fingers! Repeat until you have the amount of enchiladas you want or sauce runs out. Oh!! Add oil when it starts getting low. Also, by the time your done the other enchiladas might get cold so youll have to microwave them to get them hot again. Lastly, I top mine with lettuce, tomato, onion, and sour cream. I am so sorry for my terrible recipe ? I tried my best to explain. If i find a recipe on google that i think is worthy ill definatly send it to you!

I make my enchiladas the complete opposite way that you do OP. I warm the tortillas on a comal or microwave, fry in oil, then dip in sauce. I fill them with grated cheese, onion, salt, and comino mix.
I’ve never tried your way before. I’ll have to do that. I’m open to new ideas!

My family is from Durango so we make “sweet” enchiladas.

The enchiladas aren’t really sweet. The chocolate just balances the flavors. The Chile can be bitter.

I seriously love that you made them this way. Me and dfs dad one got into a figjt over how to make enchiladas i i said deep fry and he said to make them in the oven. K now you ccan make it both ways but i think the oven ones taste weird

@mad yea i made it in the oven once and i didnt like it ? It was way too dry and the flavor was diffrent even though i made the chile the same.

At @kitty yes, my dad used to make them like that before he decided to go vegan and I love it.!!!! Or he would bake them with chicken and the mix on top. Although he used to use queso cotija not fresco.
Edit: and he used to use the vinegar from the chiles en vinagre instead of regular vinegar, but SO doesn't like spicy at all so I make it with just a bit of regular vinegar and it's still good!!
