I made this apple cake over the weekend- I have a piece everyday - one left for tomorrow 😀 so nice but I feel guilty lol

Polish apple cake- Szarlotka

ingredients:

3 glasses of wheat flour type 500 (maka krupczatka

2 tsp baking powder

1 margarine or butter -250g

5 eggs ( yolk for cake mixture, whites for meringue)

1/2 of glass of caster sugar

3 tbsp sour cream (kwasna smietana)

1/2 pack of vanilla sugar-15g

2kg apples- cut into 8's

cinnamon

for meringue

1 1/2 glass of caster sugar

1vanilla blancmange ( budyn waniliowy)

preheat the oven to 180 degrees fan oven

Prepare the apples and fry them for approx 10 mins. Add a bit of cinnamon. Leave to cool

Put flour, baking powder, margarine, sugar, sour cream, vanilla sugar in a bowl and mix it- city it with knife until late well combined

add egg yolks and continue cutting with knife

Now get your hands in there and mix all the ingredients. The mixture will be crumbling.Place most of it in the large baking tin pressing down. Leave so crumbs aside - 1/5 of all the mixture.

put cold, cooked apples on top

in the meantime whisk egg whites with 1 and a half glass of sugar and vanilla blancmange until firm

place the meringue mixture on top of apples . Sprinkle with crumbs

bake for 50 mins in preheated oven on 180 degrees fan oven
