2 boneless skinless chicken breasts-cut into bite sized pieces
1 cup of Jasmine Rice
4 cloves of garlic- peeled and minced
2 scallions- cut of the root ends and separate the white part from the green parts
Fresh green beans-as much as you want
2 tablespoons of soy glaze
1 tablespoon Sambal Oelek- this is really spicy so start with a little
1 tablespoon sesame oil
Enough cornstarch to coat chicken, I used 1/2 cup
1/4 cup of ketchup
Cook rice in a small pan with 1 1/2 cups of water until boiling then cover and reduce heat to low and cook for 12 minutes then remove from heat and fluff with a fork.
For the sauce: Heat the sesame oil until hot, add the garlic and white bottoms of the scallions and cook until fragrant (stir frequently so it doesn't burn) turn off the heat and add ketchup, soy glaze and Sambal Oelek sauce, stir to combine then set aside in a large bowl.
Cost and cook the kitchen with the cornstarch, salt and pepper, cook in a pan with a thin layer of oil until cooked through. Let drain on a plate layered with paper towels then put in the bowl with the sauce and toss to combine.
