Meal ideas? Single mommy working and I start school tomorrow. I'm also nursing my monster so healthy is better!

Last night I roasted chopped potatoes, carrots, cauliflower, and parsnips in the oven and it was so good! Just coated with olive oil and salt and pepper😊
