Made a kick ass tostada for lunch today with the leftover shredded chicken, beans, and onions from the other night! I used a fresh corn tortilla, topped it with chipotle laughing cow and the chicken mixture, then heated it up in a hot nonstick pan til crispy. Some fresh avocado and hot sauce on top...😍😍😍
