I second zucchini noddles and zucchini bread . Some people like zucchini boats also you hollow it and stuff it to your liking with meat cheese beans etc veggies

Here is another recipe (air fried). But You could make this in a toaster oven (or stovetop) easily with a bit of olive oil for crisping.
