Yes!!! You are so welcome. Love eggplant Parm! We do meatless days too! If I had it my way I'd do meatless days more often but my husband loves red meat!

Slightly unrelated to your post:

I went vegan for about a year but when I got pregnant with Lynnie I craved steak & cheese so I went back to eating meat & dairy. My plan was to go back to veganism after I had her but since I was breastfeeding it was hard getting the proper nutrition & I was weak all the time.

I was anemic n was on iron tabs for a few mths n then 2 iron infusions and last blood test a few mths after last iron infusion, iron is all good.. have to go for another test to check it as soon as I can remember to not have a coffee at home n go straight up there after dropping seanna at school... Sometime soon lol...
