
My hubby had Vinnie’s (a local burger place) for dinner so I made myself a cheeseburger casserole. The bottom is cauliflower rice, then ground turkey, I use vegan cheddar shreds (follow your heart brand) and ketchup and mustard on top. I use frozen cauli rice so I steamed it for 3 minutes I browned the ground turkey during this and seasoned it with McCormick garlic multipurpose seasoning. Cook at 400 for about 10 minutes or until cheese is melted. Plenty of leftovers for me for tomorrow.
