Yo...so my man is from the south right. Well yesterday he brought home a bunch of fresh collard greens. (We normally eat them canned since we like them) Today he messages me and says he wants them for dinner. I have NO CLUE what to do with these things at all. Whatever recipe I make is gonna have to be vegetarian since we don't have any bacon or other pork meats that typically are used to flavor them. Can anyone tell me how I'm supposed to deal with these things and make sure they don't taste bland?

Wash them really really well. Cut them from the stem and boil them down with onions garlic and Creole seasoning. Serve with cornbread.
