Burrito bowls with chicken/beef/no meat, black beans, tomato, corn, rice, lettuce, avocado, salsa, and cheese.
(Bonus, for lunch if you have leftovers, add a can of refried beans and make quesadillas).
Crock-Pot chicken tacos. Easy, just throw in chicken breast and a jar of salsa and cook on low for like 5 hours then shred the chicken. Then make rice on the side and add the juice from the bottom of the crock pot.
