Another easy GD meal. Spinach salad w/red grapes, tomatoes, shrimp, carrots and lite vinegarette dressing. I would have added walnuts too but I ran out. Still it tasted great!

Seriously I feel like GD may have been such a blessing in disguise. I don't like knowing my baby girl will be at higher risk for it when she's older and pregnant herself, but it's definitely given me time to better prepare for healthier eating habits that I'll be able to introduce her to early on in her life. And since diabetes runs in my family, I'll be healthier and lower my risk of having it again as I get older.
My Dr told me that when my blood sugar is high, baby girl's is even higher than mine!!!! To think mine was 208 at my 1 hour glucose test is scary. I am so glad I've taken it seriously for the sake of my daughter being born healthy!

Have you heard of trim healthy mama? Its very diabetic friendly and the plan is a bit of a learning curve but its about separating your fuels. They have some great recipes.
