Pinterest is my best friend. Lol. I actually just made a quinoa mix. It had quinoa, corn, black beans, (called for red peppers but I dont like them lol), green onions, cilantro, and a dressing that was made from olive oil, cumin, lime juice, and minced garlic. I also added in spinach. (:
