Have you tried limiting the times you have to say no. For example if they want to eat a sweet you say lets have an apple instead not no. All they hear is no they don't hear anything you say after it. In the pan incident instead of saying no say let's play Lego or give a choice like do you want to play with your blocks or your dolls now and direct them to an activity away from the pan.
That's I found worked during my sons defiant stage.
My second daughter was like this. One day right after her brother was born. My husband was cooking bacon and she kept trying to grab it off the pan and kept getting told no. Anyways our neighbor called the cops. Then came talked to her. Luckily for me it stopped after that.
