How long/often to pump?

So, I am mainly pumping now due to having a strong let down. My little baby just can’t handle it and he ends up choking and spitting up like crazy afterwards ? my question is, is it really necessary to pump 15 minutes every three hours like they say? Usually I get all my milk out in about five minutes and the rest just feels like my nipples are being ripped off. I’m also pumping more than he can drink. I always get between four to six ounces each time. I’ve got about 60 ounces in my freezer right now from left overs and he’s only 10 days old. I’m not sure what I’m going to do with all this extra because I’m a stay at home mom, but I also don’t want to lose my supply if I don’t pump enough....
