My fave at the moment is home made fajitas
I hate the packet fajitas so I buy the wraps, cut up a chicken breast or 2, marinate the chicken (fave marinade is teriyaki at the moment) then chop up some onion, lettuce, peppers, cucumber and tomato, I'll even add a dollop of coleslaw on the side of I'm super hungry, it's so yummy and very filling, I usually just get two trays and chuck all my chopped up bits in piles so we can just pick at them and load our wraps as we eat them rather than pre making them and putting them on plates, I made them for my 2 nieces the other night and they loved them and had fun making their wraps up themselves ? X

Very yummy and healthy! Also love home made oven chips an 2 fried eggs at the moment as well lol nothing special but a very yummy meal and a nice change from frozen over chips X

One of my faves atm is chorizo Alfredo. It's ridiculously fattening lol but it's lush!
Dice up chorizo and fry it off. Cook the penne pasta & mix together double cream (about 100ml) grate some Parmesan and add in some parsley & Cajun seasoning. It's so so nice and easy to make. My son won't drink milk anymore (he's 2 and a half) so I find it a good way of getting some dairy in him - that's how I justify the extra calories for myself ? xx

Chicken & chorizo paella (love the chorizo in this house ?)
Paella rice 150g
Chicken stock
Chicken
Chorizo
Paella paste (m&s) or you can substitute for Jambalya paste from tesco
Fry the chorizo for 5 mins, take off the heat.
Fry the chicken for 5 minutes, then a further 2 after pouring on half a pot of paella paste
Put the chorizo, paella rice and chicken stock into the pan with the chicken, put the lid on and simmer for 25 minutes ? xx
