I am so proud of this meal. It was absolutely delicious and I put a decent amount of thought and effort into it. I cooked the meat yesterday for the stuffed peppers with shallots and seasonings, they have brown rice I made with the pepper tops shallot and mushroom, I combined the meat and the rice then I topped it with red sauce and Parmesan cheese. I made the red sauce earlier this week. I roasted the cauliflower (which my husband protested against and currently has none left on his plate) it has 2 tbs of olive oil paprika parsley garlic powder and then tossed with Parmesan cheese. The beans have minced garlic green onion and diced ham. I tried to be both creative and healthy. All the vegetables are fresh and the entire meal is home made. Score.

Crockpot!!! Peppers were done in there and beans were done in 5-10 mins. Cauliflower too. I also cooked the meat yesterday evening and the brown rice was instant.

Great job. Looks good. I need to get some crockpot recipes from you. I've never found anything besides soups, chili, roasts that actually turn out well or as well as a stove top or oven.

Any time there's tons. Before I go back to work st the end of August I plan to do a big meal prep. Freezer to crockpot dishes. Look that up. It's what I did preparing for when I had the baby. We had homemade food ready everyday since he was born. They lasted at least a month. There are several youtubers that show recipes to get you started then you kind of figure it out. I can't really think of anything I can't cook in there.
