Charles will, but he may decline and make William the King of England. William is much more popular. If Charles becomes king, William will be Prince of Wales until he does become king. Kate still won't really be Queen though. She'll be the royal consort, like Prince Phillip is now. She'll be formally known as the princess of Wales. Kate is currently the duchess of Cambridge. Diana was technically never a princess either - she was lady Diana, princess of Wales, not Princess Diana.

It was said that when Charles married Camilla he had to give up his right to the throne.. however the royals are becoming more 21st century (take Meghan for example, a mixed race American- would have been unheard of in the monarchy in the past). If Charles doesn't take the throne it will go to William and then Prince George, Princess Charlotte, Baby #3. Unless George has Children x

And as for Kate, she will take the title of Queen - as a king can have a queen but a queen can't have a king (hence Phillips 'prince' status) however she will not be classed as the Queen of England. As mentioned before she will be the royal consort x

It's not an optional thing. There are very strict rules about ascension. The throne always goes to the oldest son which is Charles unless he abdicates which can be forced but in this day and age they wouldn't. When Kate was pregnant with george they changed they rules so the oldest child regardless of gender would inherit the throne which is now moot because her first child was male. I can't imagine that charles will be king for long, after all the queens mother lived to be over 100 and the queen seems to be going the same way.
