I miss mac n cheese. Maybe I will make it with almond shredded cheese and quinoa pasta.
I love slightly undercooked noodles. Has a nice bite.

I️ use a combo of sharp cheddar, smoked Gouda and Asiago when I️ make Mac n cheese. And then I️ add crumbled bacon and caramelized onions. It’s a winner for sure.

@skate my recipe is one you’d never see on here (or anywhere) because it’s a family recipe passed down from generation to generation and there’s no measurements. Besides that, I don’t out family recipes because they’re sacred to us. I know there’s tons of great baked mac & cheese recipes floating around tho!

Baked Mac n cheese is delicious. Especially the topping. I’d love to see your recipe... As for which is better, if any dish is bland or lacking in flavor, it means the person cooking doesn’t know how to cook or doesn’t use quality ingredients. You should be tasting and seasoning as you go, not rely on a recipe word for word.

Everytime I make it mine comes out amazing. I use sharp cheddar and I hand grate it. I freaking love the cheese sauce. ?
No, they weren't egg noodles, they were a macaroni type but I don't remember what they were called. I will definitely modify it somewhat if I make it again. I wish I had used sharp cheddar but I only had mild.

Mmmmmmm looks awesome. What kinda pasta did you use? Kinda looks like egg noodles. Hope your family likes it. It’s not everyone’s cup of tea, but it’s still a family favorite in our house.
@PP... use whatever your family likes. Taste the cheese before you cook. If the cheese isn’t something that your family likes, they won’t like the Mac n cheese. We use the sharpest cheese we can find, because it gives the strongest cheesiest flavor and my family likes it. If your family prefers a more mild cheese then that’s fine, use what your family likes. Recipes like this are super easy to change to fit each families needs. You can change out the cheese or the seasoning, since this is such a basic starting recipe. Oh also, personally we buy the block of cheese and grate it as we need it, so maybe you’d like the taste of that better, if you weren’t already doing that. I’m sorry it didn’t work out when you tried it. That’s a bummer.

I think I used the wrong cheese or something when I made it. It had a really weird after taste. My kids are huge mac and cheese fanatics. They wouldn't eat more than 2 bites. I ended up throwing most of the pot away. Suck too because it looked SO good and smelled heavenly. I'm wondering if maybe I need a milder cheese, but I'm too leery of making it again just for it to be thrown away!
