I follow a couple vegan moms on YouTube and o get all the ideas from there! Our current battle is trying to get her to eat lettuce 😂 they suggested basically mincing it and putting it in mashed up avocados but she hates them haha so we put it with her bananas! This morning she had kale with her bananas.
Try frozen veggies, it kind of masks the taste 🤷🏼♀️

@b3autymarkk23, just be careful and make sure he's getting lots of amino acids, that's the only main concern her doctor had with a vegan "diet"
