Busy productive day. I have to be honest that I'm proud of myself for going strong with my decision to go Vegan. Tomorrow will be one week since I started. I've been tempted but then I remind myself why I'm doing it & I stay focused.

Today I made a delicious cauliflower rice with mixed veges & meatless sausage. The sausage is vegan made of eggplant, fennel, red peppers. It was a little spicy & the flavor I need to get use to.

Went out to run errands with my cute little hipster & my oldest. He's becoming a handful 🤗 won't sit still for a second. Our outing are becoming more interesting with him being so active.
