I try to give him a little of every food group. Sometimes he eats it all and sometimes he throws it all on the ground. I always keep boiled eggs in the fridge. My son eats them any which way. I like to steam veggies ahead and store them in the fridge as well. I try to keep pasta and rice in the fridge too. He'll eat it with different sauces. I add ground turkey or beef or shredded chicken.
If we have sandwiches I make him one without most of the veggies on it. Usually I cut grape tomatoes and avocado to serve on the side.
Some current favs are chicken quesadillas, grilled cheese and ham, roasted potatoes with ketchup, turkey salad (shredded turkey, little mayo, finely cut celery and chopped grape tomatoes) with crackers, broccoli and cheese, layered bean dip, corn bread and chili.
Just mix it up and try different things. Good luck finding stuff your LO will love.
