INGREDIENTS

•1/2 cup red quinoa, rinsed well

•4 tablespoons extra-virgin olive oil, divided

•1/2 head Savoy cabbage (about 1 pound), cored and thinly sliced lengthwise, divided

•1 can (15 ounces) chickpeas, drained and rinsed

•3 ounces pitted large green olives, such as Castelvetrano or Cerignola, halved (about 3/4 cup)

•1 lemon, zested and juiced

•1/2 cup coarsely chopped fresh dill

•Salt and pepper to taste

•Nonfat Greek yogurt, for serving (optional)

DIRECTIONS

1. Bring water to a boil in a medium pot over medium-high heat. Stir in quinoa and 1/2 teaspoon salt, and return to a boil. Reduce heat to low, cover, and simmer 15 minutes. Uncover, raise heat to high, and cook until water evaporates and quinoa is dry and tender, about 5 minutes (stir frequently to prevent scorching).

2. Heat 1 1/2 tablespoons oil in a large nonstick skillet over medium-high heat. Add half the cabbage and 1/2 teaspoon salt, and cook, stirring occasionally, until tender and golden brown in places, about 8 minutes. Transfer to a bowl. Repeat with 1 1/2 tablespoons oil, 1/2 teaspoon salt, and remaining cabbage.

3. Add remaining tablespoon oil to skillet. Return sautéed cabbage to skillet, add quinoa, and raise heat to high. Cook, stirring occasionally, until quinoa is toasted and crisp, about 8 minutes. Remove from heat. Add chickpeas, olives, and lemon zest and juice, and toss to combine. Season with salt and pepper. Stir in dill, and serve with yogurt

Looks delicious can't wait until the morning. 😋you can make it anyway you want this how we do it. 1 cup old fashion oatmeal 1 cup almond milk 1 tablespoon chia seeds 1 teaspoon ground flax seed 1 tablespoon cocoa mix 1 tablespoon peanut butter Honey to taste Add all ingredients in mason jar. Seal and give it a shake. Then enjoy in the morning with banana.

Homemade chicken noodle soup ladies! 8 cups Chicken Stock 2 skinless, bone-in chicken thighs 1 skinless, bone-in chicken breast half 2 cups diagonally sliced carrot 2 cups diagonally sliced celery 1 cup chopped onion 6 ounces uncooked medium egg noodles 1/2 teaspoon kosher salt 1/2 teaspoon black pepper Celery leaves (optional) Preparation Hands-on: 51 Minutes Total: 1 Hour, 1 Minutes 1. Combine the first 3 ingredients in a Dutch oven over medium-high heat; bring to a boil. Reduce heat; simmer 20 minutes. Remove chicken from pan; let stand for 10 minutes. Remove chicken from bones; shred meat into bite-sized pieces. Discard bones. 2. Add carrot, celery, and onion to pan; cover and simmer for 10 minutes. Add noodles, and simmer 6 minutes. Add chicken, salt, and black pepper; cook for 2 minutes or until noodles are done. Garnish with celery leaves, if desired.
