I get boneless skinless chicken breasts, cut them in half and fry them in a little bit of oil so they don't stick to the pan, salt, pepper and onion powder and in a separate pan I make the pesto (I buy the package of mix that you make with water and oil) I drain the chicken when it's almost done and then add the pesto, let the chicken finish cooking. Then I take the chicken out with a fork and put it into a microwave safe pan, put Italian blend shredded cheese on top and put the lid on so it melts. Then I add 2 tablespoons of butter to the pesto in the pan that the chicken cooked in then when the mushrooms are cooked I pour it over the chicken so it has that buttery pesto sauce.
